Nothing beats that smoky flavor you get from cooking on a grill! Whether it's cooked on a fire pit, a fancy propane grill, or a grill plate on the stove, food just tastes better!


At Southern Grillin, we love the UUNI Wood-Fired Oven. It heats up to 900 degrees Fahrenheit and uses real wood pellets! The UUNI cast iron pan sizzles and chars vegetables, perfect for fajitas!


Portobello mushrooms are amazing meat substitutes. They're packed with nearly as much protein as beef, and absorb the flavor of spices and marinades perfectly! The wood fire of the UUNI lightly smokes the mushrooms without drying them out.

Something about flour tortillas stuffed full with portobello mushrooms and sizzling bell peppers and onions really gets my mouth watering! With minimal ingredients, and just a few simple seasonings, this recipe is super versatile. If you're a carnivore, simply add your favorite meat!


Other vegetarian options include the addition of scrambled eggs, avocado, shredded cheese, or black beans. And you can even make these fajitas gluten free by subbing in corn tortillas! I recommend lightly warming corn tortillas in the UUNI pan before serving.


Mix and match your favorite ingredients and toppings for a delicious, grilled, Mexican inspired dinner!


Portobello Fajitas

Yield: 3-4

Prep time: 15 minutes

Total time: 30 minutes


3 large portobello mushrooms | stems removed, wiped clean and thinly sliced

bell pepper trio | seeds removed and thinly sliced

1 poblano pepper | seeds removed and thinly sliced

1 white onion | thinly sliced

flour tortillas

½ lime | juiced

1 tsp cumin

garlic powder to taste

pinch of sea salt



  1. Heat a large skillet over medium-high heat. Once hot, add a dash of olive oil, peppers, mushrooms, and onion. Season with lime juice, cumin, garlic powder, and sea salt. If cooking with the UUNI Wood-Fired Oven, cook all ingredients in the cast iron pan according to instructions.
  2. Cook until softened and slightly caramelized.
  3. Warm tortillas on oiled aluminum foil over a warm burner until slightly browned. Serve with your favorite toppings and enjoy!
